amazing sea bass recipe

we don't prepare fish often, but when we do, we do it with a TON of flavor




so i give you




it's not a highly detailed recipe, but it's easy enough to follow and customize.  
i love to just throw things together and this is one of those recipes.  

Amazing Sea Bass (serves 2)

1 pound sea bass
1 bunch of parsley
1 bulb of garlic
a handful of gourmet olives
another handful of grape tomatoes
1 lemon
1 bunch green onion
olive oil
pepper

preheat oven to 450*
create a bed for the fish out of lemon and green onion



grab some flat leaf parsley, lemon and garlic.. i use lots of garlic



some gourmet olives.  you can use kalamata or just plain green
i use.. you guessed it.. garlic stuffed



and some grape tomatoes



i cut my grape tomatoes like this.  hold a bunch with a lid and slice horizontally



just chop and slice until you get a nice little relish
squeeze a half a lemon in there, drizzle 2tbsp of olive oil, and add a little pepper



now get your sea bass.  so gorgeous, right?



this is exactly one pound.  this sucker is expensive... but worth every penny



slice him in half and nestle the pieces into place



then dump all that amazingness on top.  drizzle more lemon or olive oil if you want.  
i'll add white wine if it's open   ::cheer::



wrap it up and bake at 450* for at least 25 minutes
it will be done when the fish is opaque and flakey



and voila!
serve with rice and veggies, and hearty toasted bread for mopping the plate
(you will miss half the meal if you don't pour all those juices on top)



a friend made this a looong time ago for a dinner party.  she added other things that weren't exactly meshing with my palate. so i changed it for me and my family.  i think you could top this fish with just about anything and get a great result :)
